Grilled Quinoa & Veggie Salad w/Citrus Vinaigrette

*This recipe was inspired by this recipe from The Chew.

Grilled Quinoa & Veggie Salad w/Citrus Vinaigrette



Ingredients:

  • Olive Oil
  • Kosher Salt and Ground Black Pepper
  • Lemon Juice
  • 2 Zucchini (cut in spears)
  • 1 Red Bell Pepper (cut in wide slices)
  • 2 pint Cherry or Grape Tomatoes
  • 1 tsp Mustard
  • 1 tsp Mayo
  • 1 tsp Honey
  • 1 cup Dry Quinoa (cooked to package instructions - I personally like to replace 1/2 the water with 99% fat-free chicken stock; it adds flavor.)
Preheat a grill or grill pan to medium heat. I used my Foreman grill and it worked perfectly. Brush zucchini and red pepper with olive oil and season with a pinch of salt and some ground black pepper. Grill each for 4-5 minutes per side.

Toss tomatoes in a bowl with 1 tbsp olive oil and a couple pinches of salt and some ground black pepper. Create a foil packet with tin foil and toss them in there, then place on the grill for 5-10 minutes. Meanwhile, slice up zucchini and red pepper into smaller pieces, then set aside.

In a small bowl, combine 2 tbsp lemon juice, mustard, mayo, honey, a pinch of salt, ground black pepper, and whisk in 1/4 cup Olive Oil.

Combine quinoa and all veggies in a serving dish. Pour in your citrus vinaigrette and toss to coat evenly. Serve and enjoy!

This recipe yielded enough to provide me healthy lunches for most of the week. I made it on Sunday when I had some time to meal prep. Hope you'll try it!

Blueberry Kale Smoothie

Losing weight postpartum takes a lot more than exercise...it also takes eating right. I'm sharing with you today my go-to breakfast. Since I am now a stay-at-home mom caring for an infant and a three-year-old...I rarely have a moment to myself, so it's important I have something that I can make quickly and I want it to pack a lot of punch because it could be a while before I get the chance to grab anything else to eat!

Right now, I love a good blueberry kale smoothie. Kale is quite the super-food. According to Wikipedia, kale is very high in beta carotene, vitamin K, vitamin C, and rich in calcium. Kale is a source of two carotenoids, lutein and zeaxanthin. Kale, as with broccoli and other brassicas, contains sulforaphane (particularly when chopped or minced), a chemical with potent anti-cancer properties.

I also throw in some chia seeds for some good Omega-3 fatty acids and calcium.

Here is my personal recipe:

Blueberry Kale Smoothie

1 c. fresh kale (loose)
1 med. banana
3/4 c. frozen blueberries
1 tsp. - 1 tbsp. chia seeds
3/4 c. skim milk or almond milk
1 tbsp. natural peanut butter (or other nut butter)
1/2 c. ice

Blend and enjoy!

Monday Musings

A few things this lovely Monday...

First of all - I've officially applied to college! {I know I'm quick, huh? I think I just mentioned the idea in Friday's post?} I've applied to Trident Technical College here in Charleston because I've heard their Dental Hygienist program is pretty stellar. The only issue is that they are full until Spring 2016 at the moment, BUT depending on my 10-years-old art college transcripts {I currently hold an Associates of Science in Graphic Design}, I may or may not have to get some prerequisites out of the way anyway, so I am going to start there for now. I have to wait to talk to the admissions counselor about all of that. I'm excited though...if I have to take some of the pre-reqs, I can start them online as soon as January hopefully, so possibly starting earlier than I had thought! And I can still consider other Dental Hygienist programs later if they can get me in earlier, but I'll cross that bridge when I get to it.

Second...I don't know if you heard the sad news, but hottie Charlie Hunnam has dropped out of the role to play Christian Grey in 50 Shades. I'm sad because he's super hot, but truth be told, I still had a hard time picturing him as that character, so maybe it's for the best.

Third, not a lot went on this weekend. I had one of those just get things done weekends. I had to return library books, plan a menu for the next two weeks until I get paid again, go grocery shopping, clean house and do laundry...you know the "mom" stuff. And of course being pregnant...it's like, what's the point of going out anymore when I can't even enjoy a glass of wine or a cocktail?

I am looking forward to trying out some new recipes I found...one for breakfast is this Acai bowl that Andee Layne at The Honeybee makes {and if you look at her, you KNOW why I would follow her diet!}


 

1 packet frozen Acai
1/2 cup frozen organic blueberries
1/2 cup frozen organic strawberries
1/2 cup organic apple juice (or whatever juice you have on hand)
1/2 cup plain greek yogurt
topped with 1/4 cup granola

It actually is pretty similar to the protein smoothies I make {sans the whey protein}, but served in a bowl with a little crunch on top. I bought some Chia seeds at Trader Joes to throw into the mix as well.

To be completely honest {and accountable}, this last week or two, my diet has not been wonderful...as easy as it is to say you're going to have a fit pregnancy, it is sooooo hard when you are feeling nauseous and nothing but carbs makes you feel better. But, I've started to come out of that little nauseous phase in my pregnancy, and hopefully I can stick to my healthy menu from now on. I've still been at the gym and all...but you can't do much good when your diet is all amiss.

Beach, Bikini Season and Florida Vacay

I'm happy to report that after my post yesterday on Tanner, he did have a much better attitude by the time I picked him up after school. I took the boys to the beach last night to watch Daddy play volleyball at the Windjammer...it was also my first time taking Sugar with us and she was so well-behaved!

I try to get out there with the boys at least one weeknight per week since Jake plays volleyball there on Tuesday and Thursday evenings.

We are headed to Florida in just over 3 weeks to go to Disney World and Legoland and I really need to get my butt in gear to look good in a bikini whilst I lounge at the resort pool. I've been working out a lot, but I think that changing some of my eating and drinking habits is what is going to be the most effective. I eat pretty well most days, but I definitely am not hard enough on myself as I should be. I need to be a little more strict and less complacent. I also need to cut out alcohol for a little bit. {I think those daily glasses of wine are beginning to add up. Ha.} I've been making our dinners from a site called Skinny Taste. I've mentioned that site on here before. I mostly stick to fish, turkey and chicken recipes - not much of a red meat eater. Other than that, I've been buying a lot of fresh and organic produce to snack on, and staying away from sugary, processed foods. I tell you, since starting to read The Honest Life by Jessica Alba this past week, I had a whole change in mindset while at the grocery store on my last trip - and I typically buy pretty healthy anyway! But there are a lot of chemicals that are disguised with "healthy" packaging that I never really thought about before. I highly recommend her book.

I suppose if I can't get myself bikini-ready, I could always sport something like this:

Super-cute, right? I am bikini-ready {with the exception of a tan}, but I definitely could work a little harder. I mean, I am 30 now - no more messin' around!

Halloween Is Over...

Now what to do with all of that candy?


If you're like me, having candy in your house is just a recipe for diet disaster. I have NO will power when it comes to sweets. {Well, I do have some, but basically, if I don't say no before it gets into my house, I'm doomed.} So I try to keep it OUT from the get-go to keep from over-indulging.

Here are some ideas for getting the candy out:

1. First let your little ones pick up to 10 pieces to keep {I usually only allow for one per day to be eaten.} Promise them you won't eat any of it. {Harder to eat it if you know you're going to break a promise to those sweet things by doing so.}

2. Check with some of the local dentists to see if they offer a candy-buying program. Let your children keep the money.

3. Check with local museums, aquariums, etc. to see if they take the candy. Our local Children's Museum offers free admission in exchange for candy so they can send it to our troops.

4. Just go dump it in the trash. No harm, no foul. You'll feel much better about yourself once you've done it.

5. Take it to the office and put it in a large bowl. In a high traffic area. Far from your desk.

6. Give it to your local food bank or church if they'll take it. This time of year, they may want candy for Christmas to offer to little ones that would otherwise go without.

7. Use it in a pinata for your son's birthday that falls a week after Halloween and let the party invitees go at it. {Oh, is this just me? OK.}


Whatever you do, try to make sure there's something in it for your kids...so they don't feel they just got screwed. Help them make it feel like it's their choice...reward them for their generosity...and use it as an opportunity to teach the importance of health!

Healthy {Easy} Recipes You Should Try

Menu planning is something I'm trying to become much better at...feeding my family at the end of a busy day is a crazy task when I don't have anything planned for dinner and end up flying by the seat of my pants. I've discovered THE BEST website for healthy meals...and the ones I've tried are SOOOOOOO yum! Even the boys approve. I love to sit down on Sundays, peruse the website and plan my weekly menu and grocery list.

I made these tacos for dinner {again} last night. They are easy to make and use a few of the ingredients you are likely to have around the house anyway. I could definitely eat this once a week. My husband just loves it.

My boys just love this for breakfast - and I do too! It's a guilt-free, yet very satisfying way to start the day. You could probably even make it the night before, cover it and pop it into the fridge to have a quick grab-n-go option for breakfast.

Meal Planning and Prep

The busy life of a mom, much less a working mom, can easily get in the way of clean eating efforts. Today, we are often on the go from here to there, from sun up to sun down. It's nearly impossible to stay on track with your nutrition without proper planning ahead of time.

My best, cleanest eating weeks are those where I set aside a little time after the boys have gone to bed, usually on a Sunday evening before the work week begins, to prep and package my food to be easily thrown in my lunch bag every day of the week. You will also find, you might save a lot of money this way, as you hopefully will spend a lot less on meals out.

Here's a peek of how I do it:

This week, my plan was to have a leafy spinach salad with cucumbers and grape tomatoes for lunch each day. {Some may prefer more variety, but I absolutely love this salad, so I have no issue eating it every day.}




I often make the salad in a very large Tupperware container I own:




And I spoon some into a smaller Tupperware dish to take with my in my lunch bag the next day.




I then make sure to have a small dish with my current favorite salad dressing in it. This is Newman's Own Lite Sesame Ginger...it is sooooooo good...and only 15 calories per serving. I make sure to take just a serving's worth.




Additionally, I like to have some good protein to go with, so I hard-boil some eggs to get me through the week {and a few extra for Tanner's lunches}.




As far as snack foods to get me through my long work days, I pack things such as string cheese, raw almonds, carrots, apples, grapes...just anything that is naturally low-cal and nutritious.

As soon as I'm done with prep, I pop a day's worth of snack and lunch into this super-cute lunch bag I found at Marshall's for $9.99:




Isn't it cute? I just love it. And it's the perfect size, like a purse. I plan on getting it monogrammed eventually. So everything goes in here when I'm done, and into the fridge. The next morning before work, I take it out, pop a freezer-pak in it and go.

As far as breakfast, I usually carve out a few extra minutes in the morning to scramble up some egg whites, top them with avocado and drizzle with hot sauce {to get that metabolism going!} If I don't have time for that, I make a whey protein smoothie...I'll have my personal recipe for you here on the blog soon.

Confession: I Have a Vice

As much as I strive to take great care of my body, I must admit my one addiction that is not good for my health, or at least certainly is not helping it any.

Hi, my name is Morgan, and I'm addicted to Diet Rockstars.




I've been drinking at least one a day {sometimes two!} for the last 4-ish years. {Yikes, it scares me to say that!} Minus my pregnancy with Breckin of course, I quit cold turkey for that entire nine months.

I often get unsolicited advice from strangers/friends/coworkers that I need to quit because "that stuff" is so bad for me. I've been justifying my habit for years with excuses such as:
  1. It's the one bad thing I drink, other than that, it's water or skim milk {or red wine, but that's an addiction topic for another day...}
  2. There are worse addictions, i.e. smoking, drugs, etc.
  3. It has vitamins! Better than a nutrition-lacking diet soda for caffeine.
  4. Yada yada yada
Yeah, I'm a prime candidate for an intervention.

Well, so last night, I came across this article. Yeah, heavy. That's it, I do need to stop.

So starting today, I'm going to pick one bad habit to kick, and this is it. Do you have a guilty pleasure you can't seem to curb? What is it? I'd love to hear. Also, I'd love if you'd join me in trying to kick the habit - any habit you might have.

Breaking The Rules

I was just checking out the following article on Yahoo! I don't know about you, but I am constantly thinking about what I eat. Not to say I never eat anything bad; I do, but I am definitely thinking something negative about it rather than just enjoying it. It's because I know I'm breaking my dieting rules. Well, good news to those of you who are like me - here are some rules it's OK to break:

If you find it hard to stick to a strict diet, here’s some good news: Breaking the rules could actually help you slim down—and keep the pounds off over the long term. A study published in International Journal of Obesity found that dieters with a flexible strategy that allowed for sweets and other indulgences were significantly more successful at maintaining weight loss during the three-year study than those who strived for rigid control of their eating habits.
That’s because the rigid control group typically had an “all or nothing” mindset. As a result, they yo-yoed between shunning all goodies—including their favorite foods—and falling off the diet wagon completely. Flexible dieters, on the other hand, deemed it good enough to “more or less” follow their weight loss plan, without letting slip-ups escalate into eating binges. But which rules are okay to break without sabotaging your diet? NSCA-certified conditioning coach Holly Mosier, author of Stress Less, Weigh Less (Greenleaf Book Group Press, 2011), offers these myth-busting insights:

#1: Don’t eat after 7 PM.
Why it’s OK to break this rule: There’s nothing magical about avoiding eating at night. The key to weight loss success isn’t when you eat; it’s taking a close look at what you eat and staying within your daily calorie allotment, says Mosier. “It’s very helpful to keep a food diary and look at your eating patterns.” A study by Kaiser Permanente’s Center for Health Research found that people who maintained a daily food diary had double the weight loss of those who didn’t keep any records. Writing down what you eat helps curb the urge to overindulge, by making you mindful of your dietary patterns and caloric intake, regardless of what time of day the food is consumed.

Mommalicious says: I definitely agree with this one. If I followed this rule, most nights I wouldn't even get to eat! When you have two young children, especially one of which is a baby, you get completely consumed in their bedtime routine. If you're a working mom, it's even harder, because dinner might not even get on the table 'til 7pm most nights, or you just put together something quick for the little ones and take care of some chores while they eat, rather than making a meal for yourself. Some nights, I don't get to eat until after the kids have gone to bed, around 8pm. But I think it would be worse to put my body into starvation mode than to just allow myself to eat at this time of night.

#2: Eat five to six small meals during the day.
Why it’s OK to break this rule: Although the theory behind this rule is that frequent eating keeps your metabolism stoked, the reality is that having more opportunities to eat often results in overeating, resulting in weight gain instead of weight loss. What’s more, new research from Purdue University founds that eating three regular-sized meals that include lean protein, such as chicken or tofu, made people feel more full than eating smaller, more frequent meals. The researchers also reported that eating three high protein meals also decreases late night eating and food cravings.
Avoid the worst fitness trends of all time.

Mommalicious says: I'm a little torn on this one because I actually believe the 5-6 meals a day theory works more often than not. I tend to like to eat my meals like this, and I don't find that I overeat. I do have 3 larger meals, and then light snacks no more than 100-200 calories two or three times a day. I guess that's what works for me. I don't consider this to be a rule either, it's just my lifestyle and the way I fuel my body. But of course I know it doesn't work for everyone.

#3: Stick to fat-free or low-fat foods.
Why it's OK to break this rule: The American Heart Association recently reported that low-fat and fat-free foods can contribute to obesity, because these foods often contain as many or more calories than the full-fat versions, yet trick people into thinking that these are good choices for weight loss. Always check the nutrition facts on the label and avoid low-fat products that are loaded with sugar. Everyone, regardless of size, needs some fat in their diet to transport fat-soluble vitamins, such as A and E, around the body. Good fats, such as omega-3 fatty acids, also play a role in heart health and may aid immune system function. The AHA advises limiting fat intake to less than 25 to 35 percent of total calories, with less than 7 percent of calories coming from saturated fat. Choose unsaturated fats, such as olive oil, nuts, or oily fish.

Mommalicious says: I wholeheartedly agree with this. Although I do stick to low-fat dairy products vs. full fat...but there is definitely a difference in the calories and fat calories - I know this because I am a dedicated nutrition label-reader! (Albeit, this makes my grocery shopping trips a little longer than my sons can usually handle). But there are many chemicals/substitutes in the fat-free products that are actually damaging to your metabolism in the long run.

#4: Eat breakfast within 30 minutes of waking.
Why it's OK to break this rule: It’s true that studies consistently show that people who eat breakfast tend to weigh less and are more successful at maintaining weight loss. In fact, having breakfast daily is one of the habits that 78 percent of the “successful losers” who have enrolled in the National Weight Control Registry share. All of them have sustained a weight loss of 30 pounds or more for at least one year and some for up to 66 years. But that doesn’t mean you have to force yourself to eat first thing in the morning if you’re not hungry. Consuming breakfast later in the morning, perhaps after a workout to rev up your appetite, is equally effective. One study found that eating a big breakfast that’s high in protein and low in carbs helped overweight women lose an average of nearly 23 pounds.

Mommalicious says: I definitely always have a breakfast, even if it's just a quick cup of yogurt on my way out the door. But I do love to get a workout out of the way in the wee hours of the morning when I can go non-interrupted through the whole thing because the rest of the household is still sleeping! And I definitely have an appetite after that.

#5: Cut out certain food groups.
Why it's OK to break this rule: This “rule” recycles every few years. Some years we’re told to cut out red meat. Other years we’re told to avoid dairy or fruits. And we are always told to shun sugar. However, even with the willpower of iron, it’s hard to stick to a diet that leaves you feeling chronically deprived, which can set the stage for bingeing, Mosier points out. Instead, eat your favorite foods in moderation, and tweak recipes to cut down on calories. Understanding nutrition and taking a flexible, balanced approach to weight loss helps you make the smart food choices, without saddling yourself with the stress and frustration of a rigid diet that’s impossible to sustain over the long term.

Mommalicious says: I'm all about moderation. I could never completely cut out my carbs - and definitely not fruit! For me, anything like that is too stringent and definitely sets me up for failure. What I do is try to eat the complex carbs - whole grains, fresh fruits, etc. rather than the simple carbs. Red meat, well I'm just lucky there because I've never been a big fan of it. No steak for me, please. I do like the occasional burger, but that's about it, everything else is turkey, chicken or fish. My husband hates it, but his waistline and heart are thanking me. And mine are too.

Writing Prompt: My Passion

For this week's writing prompts from Mama Kat
, I chose: What are you passionate about?

Well, OK, so this is an easy one and not a surprise to most: I'm passionate about health and fitness and keeping in shape.

I'll admit, the need to stay fit (read: hot) stems from my childhood insecurities. I never felt like I was the most beautiful or even close to, and certainly felt regular-sized, rather than slender or skinny. I was always comparing myself to other girls and was very hard on myself. I always felt like I had something to prove. I hated that back then and at the time I never really knew how to change it.

As I got older, I started reading different diet books and studying different trends in weightloss. There was a lot of trial and error. I even splurged on a personal trainer at Bally's Total Fitness. But to be honest, that was pivotal for me. I finally had someone explain to me how the body worked as far as using food for fuel and burning fat and gaining muscle. As part of the package, I got a lot of tests run on me - such as metabolic rate, body fat percentage, etc. and a personalized diet and exercise plan. I actually found out that I had a very high metabolism (my personal trainer was a ripped Asian guy and he said he was impressed because my rate was just about where his was). I was shocked to hear that because I certainly wasn't ripped. After a few weeks of working with him and following the nutrition plan, I lost some weight and started to look a lot more lean and cut - the look I had desired all my school-age years. Ever since then, I have made it my personal mission to learn as much as I can about the science of health and nutrition. It's become such a passion of mine. I love that after two kids I can be proud of my body and that it doesn't even look as though I've had a kid (with the exception of some faint and minor stretch marks). I love working out - I love the high I get after an intense workout session. I love setting goals and challenging myself to attain them.

To date, I've read dozens of body-building and nutrition books. I've even taught group fitness classes at local gyms (dance-oriented classes, as dance is another big passion of mine). And in the past couple of years I've started running a lot of local 5K races - just because I love the feeling of going out there and going for it, no matter what my time is. I just love doing something good for my body and appearance.

So although my "passion" grew from a painful place...I'm glad that it was that way because it has made me who I am today and made me find something I really love. As a mom, I don't get to have a lot of personal hobbies, so the nice thing about fitness is that I can do it anywhere or even incorporate my children in it (jogging stroller, anyone?)...and at the same time, I'm creating a good example for my children. I am actually going to get my personal training certification within the next year. I want to share my passion with others and hopefully help them find a passion in it for themselves as well.
